Customizable and Budget-Friendly Breakfast Casserole Recipe

This breakfast casserole can easily be customized to fit your liking (or to fit your pocketbook by purchasing what’s on sale)! By substituting amounts, seasonings, and changing it’s presentation and how it’s served, you’ll save time not cooking every day and save money by using what you have or buying what’s on sale.

Save Time, Save Money, Save Your Sanity

As a stay at home mama of 5 (we have 4 full time) and Tradwife, all of the cooking and cleaning is my responsibility. When our family starting growing exponentially, all my time was spent cooking, cleaning up the kitchen, and once that was done, it was already time to make the next meal! I couldn’t keep staying in the kitchen all day, everyday! I needed a way to feed our children without cooking every. single. meal, every. single. day… and I needed it fast!

Enter the Most Underutilized Tool in Your Kitchen-the 13″x9″ Dish!

To prevent the dish from overflowing in the oven, I made sure the other ingredients totaled no more than 7 cups and I made sure to drain the fat off the beef. I prefer greasing the dish with organic, cold-pressed, extra virgin olive oil. We made the switch once we learned about the benefits of healthy fats. Plus, it makes cleaning the dish so much easier that I don’t even bother with parchment paper. But feel free to line the dish if you want to save even more time! Or, if you only have 1 casserole dish, line with parchment paper so that you can easily remove the casserole in order to cook another!

Customizable and Budget-Friendly Breakfast Casserole Recipe
Ingredients
18 Eggs
1 LB Ground Beef
1 TBS Salt
Pepper to taste
1/4 Cup Olive Oil (or butter or other oil)
Flavor Option Seasonings
4 Cups Flavor Option Vegetables
Note: Add 4 Cups of your choice of flavor option vegetables. NOT 4 Cups of each.

  1. Preheat & Skillet Prep: Preheat oven to 350°F (175°C) with a cast iron skillet if baking.
  2. Cook Beef: Add ground beef to skillet, season with flavor option seasonings, and cook until browned. Stir as needed.
  3. Dice Vegetables: While beef is browning, dice 4 cups of vegetables.
  4. Prep Potatoes (or Substitute): In a large mixing bowl, toss diced potatoes (or eggplant/zucchini) with olive oil, 1 TBS salt, and pepper to taste.
  5. Cook Potatoes (or Substitute): Bake or fry potatoes (or eggplant/zucchini) in the skillet, stirring occasionally.
  6. Combine Ingredients: In a large mixing bowl, combine cooked beef (drained of fat), 4 cups of diced vegetables, 1 TBS salt, pepper to taste, 18 cracked eggs, and add mixture seasonings (See below).
  7. Casserole Dish Prep: Oil sides and bottom of a 9″x13″ casserole dish.
  8. Assemble & Bake: Pour the mixture into the oiled dish. Bake at 350°F (175°C) for 45-60 minutes until eggs are set and the top is browned.
